Banana Slab cake - lunchbox favourite

This is my go to weekly baking recipe to add a treat to lunchboxes. This makes a nice big slab cake so there is plenty for after school snacking too. It is always moist and delicious and super easy to make. Ingredients  6 large over ripe bananas  250g butter - at room temperature & cut into chunks 1 1/2 cups sugar 4 eggs 2 tablespoons milk 3 cups flour 2 teaspoons baking powder  2 teaspoons baking soda 1 teaspoon salt Method Preheat the oven to 180C Line a baking dish with baking paper approx 33x22cm Place bananas, butter, sugar, milk and eggs in a large bowl and blitz with a bar mix until smooth Sift dry ingredients into the wet Mix with a large spoon to combine wet and dry ingredients.  Spoon the mixture into the prepared tin and smooth the mixture.  Place in the centre of the oven. Best Ever Banana Muffins

Muffins straight from the oven are so enticing and these ones are quick, easy and delicious. They are also dairy free (unless you add milk chocolate chips).  I throw overripe bananas and bananas that come home in kids lunch boxes into the freezer - that means I can whip up a batch of muffins at very short notice.  Ingredients Makes 12 large or 24 mini muffins 3 large bananas 3/4 cup sugar 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 egg 1 1/2 cups flour 1/4 cup oil (I use canola) Method Mash bananas. Add sugar and slightly beaten egg. Add oil. Sift dry ingredients. Mix wet and dry and spoon into muffin tins. Cook 15-20 minutes 190deg.C Variations Add 1/2 cup chocolate chips or nuts to the dry ingredients.  Take a tablespoon of flour out and replace with cocoa powder.  Use soft brown sugar.
