10 meals your kids should know how to cook before they leave home.

Came across this link for 10 basic meals. Worth saving to try these with lummoxes 2 & 3 before they join lummox 1 in the post living with your mum world.

Lamb Shanks with sweet chilli and black bean

This dish has a rich, tasty sauce. The shanks are browned and then cooked in the sauce until the meat is very tender. This can be done in the oven, crockpot, stove top or in a deep electric frypan. Best served with mashed potato sweetened with carrot, kumara (sweet potato), pumpkin or parsnip.  Ingredients Lamb shanks - 1 per person 1/4 cup black bean sauce 1/2 cup sweet chilli sauce 1 1/2 cups water 2 tablespoons grated fresh ginger 3 cloves garlic - crushed Method In an electric frypan Heat the pan on the highest setting place the shanks (no oil needed) in the pan, pop the lid on and brown on all sides - this will take 15-20 minutes.  Turn pan down to a simmer setting combine all the other ingredients and pour over the shanks. Place the lid back on and leave to simmer until meat is very tender approx 1 1/2 hours. Turn the shanks from time to time to make sure they are coated in the sauce. Keep an eye on the sauce and add more water if needed....

Home made pizzas

Home made pizzas are just the best, so when lummox number three announced that he was making pizza for lunch - the idea was met with great enthusiasm all round.  He made the dough in the bread maker - but this recipe works just as well made by hand. Home made pizzas are excellent to make with kids and I have often made them when the boys have had friends round.  I roll the dough in individual portions onto baking paper and have all the toppings in little bowls on the dining table.  The kids can choose their own combinations.  Write each child's name on the paper with a marker - so that there are no mix ups when they come out of the oven. Pizza Dough This recipe makes enough dough for 5 dinner plate sized pizzas.  Dough can be rolled thinner for more pizzas or bigger pizzas.  Halving the recipe makes 2 large pizzas. Issue Number Three: The Cromwell Town Centre or lack thereof...

The Cromwell Mall - or town centre is the cause of much concern and debate.  Most of the criticism is about the design and layout of the space that seems to have had its heyday in the past and people would like to see it revitalised, rejuvenated and brought into the modern era.  How will we do that and what are the barriers to making this happen? My little video clip will give you a little bit of insight into my thinking or if like me you prefer to read stuff - keep reading.  I wish I had some fabulous answers to a vibrant busy town centre - but I think it is going to be much more important for us to work together with the Cromwell community to find ways to add life and vibrancy to this space.
